The Chows Kitchen – Quick and Easy Menu Planning #6

Welcome to the Chows Kitchen! Menu Planning has been the biggest lifesaver for our family. As a person who would rather hold a paint brush than a ladle, I try to plan healthy(ish) and easy meals to get us through the week. Not only does it make the cooking process less dreadful, but it saves us $$$ and keeps us eating healthier. Plus, it is so easy to change it throughout the week.

I took a little break with the holidays and with us preparing for little Asher August to enter the world. But he is here and we need menu planning now more than ever! Depending on the recipe, I will adapt to fit my dietary needs. If I make any changes, I will let you know. Here is what we are having this week!

Sunday

Instant Pot Lemon Garlic Parmesan Shrimp Pasta (365 Days of Crockpot)

I am a big fan of the Instant Pot and this one is perfect for the whole family. I substitute the heavy creamy for this dairy free heavy cream (I've even used almond milk before and it worked...not as thick, but it will do).

Monday

Glazed Salmon with Spiced Carrots and Mashed Potatoes (Food Network)

All I can say is yum! I'll pair it with mashed potatoes. Trader Joes has frozen mashed potatoes that are quick and easy

Tuesday

Stir-fry with Meatballs, Rice and Veggies

Quick and Easy! We get teriyaki chicken meatballs from Costco, mix it with rice, veggies (broccoli, bok choy, carrots, etc.) and topped off with oyster sauce, soy sauce, salt & pepper.

Wednesday

Creamy Avocado Pasta (Flourishing Foodie)

This is so easy to make and it is delicious! I typically add shrimp to it, but am going to add some chicken this week.

Thursday

Salmon Melts (Food Network)

We have never had this, but I am excited to try. Cheddar cheese doesn't sit well with my stomach so I am going to try feta instead.

Another new one to us, but it sounds amazing.

Breakfast for dinner!

Our favorite is kodiak pancakes. Both girls devour these, especially in the shape of mickey mouse. We complement them with scrambled eggs, sausage and fruit.
