Quick and Easy Menu Planning – The Chows Kitchen #13

Welcome to the Chows Kitchen! A weekly Menu Plan has been the biggest lifesaver for our family. As a person who would rather hold a paint brush than a ladle, I try to plan healthy(ish) and easy meals to get us through the week. Not only does menu planning make the cooking process less dreadful, but it saves us $$$ and keeps us eating healthier.

We have a busy week ahead. Berkley is in her last week of first grade and I am going back to work from maternity leave for a week before Summer. We need all the easy meals we can get!

Here is what we are having this week.

Monday Menu Plan

Creamy Garlic Shrimp with Rice.

This is very similar to the tuscan salmon recipe we love. I'll be substituting with a dairy free heavy whip and parmesan cheese for the cheddar. I will also add spinach to give it some greenery and serve with rice.

 
 

Tuesday Menu Plan

Breakfast for dinner!

After almost 5 months off work, today is my first day back. We are in need of some comfort food tonight. Breakfast for dinner always does the trick. I'm thinking french toast, turkey sausage, scrambled eggs and some fresh cucumber from our garden.

Wednesday Menu Plan

Cheesy Ground Turkey Pasta Skillet

I am hoping this one will help our eater who doesn't like her food mixed. We typically set aside extra pasta and ground turkey so she can eat them separately, but we are going to try this out. A little roasted parmesan zucchini and we have dinner!

 
 

Thursday Menu Plan

Chicken Ranch Tacos

#2 on the list. The perfect toppings: corn, grilled peppers, black beans, cheese, sour cream, and the most important, homemade guacamole.

 
 

Friday Menu

Skillet Sausage and Zucchini

This is my kind of meal! We got some pepper basil chicken sausages from Costco that will be perfect in this.

 
 

Saturday Menu

Popcorn Chicken Bacon Ranch Pasta Salad

This looks delicious and I cannot wait to try it out. Perfect for the start of Summer.
